Kerala Style Egg and Potato Curry

Kerala style egg and potato curry.

Cooking Time: 30 minutes
Serves: 4 to 5

Ingredients:
- Hard boiled eggs- 5 to 6
- Onion,sliced – 2 medium( appr 1 cup)
- Ginger,finely chopped – 1 tbsp
- Garlic,finely chopped – 1 tbsp
- Green chilies,cut vertically – 4( or according to taste)
- Thin coconut milk – 2 cups
- Potato ,cubed – 2 small(appr 1 cup)
- Vinegar – 1/2 tsp
- Thick coconut milk – 1/2 cup
- Mustard seeds – 1/4 tsp
- Curry leaves – 2 sprigs
- Shallots,sliced – 1 tbsp
- Salt – to taste
- Oil – as required
For Masala paste:
- Kashmiri chili powder- 1 tsp
- Coriander powder – 1 tbsp
- Turmeric powder – 1/2 tsp
- Black pepper powder – 1/2 tsp
- Cinnamon – 1″ piece
- Cloves – 4
- Water – as required

NOTES
- Adjust the quantity of green chilies and chili powder , according to your taste.
- I halved the recipe ,as you can see in the pics.
