Coin Biscuits
Easy and delicious, kerala bakery style beans biscuits.
Prep Time: 10 minutes .
Cooking Time: 20-25 minutes

Ingredients:
- All Purpose flour- 3/4 cup
- Baking Powder – 1/2 tsp
- Salt- 1 small pinch
- Egg – 2 medium
- Sugar – 5 tbsp
- Vanilla extract- 1/4 to 1/2 tsp
- Melted Butter – 3 tbsp
Instructions
Preheat oven to 120 Deg C.Line the baking tray with parchment paper .In a bowl,combine together flour,baking powder and salt .Set aside.In a separate bowl add egg,sugar,vanilla extract and melted butter and mix well using a whisk or a fork until the sugar has completely dissolved .Now add the flour mix to the egg mixture in 3 batches ,mixing gently until combined.(The batter should be slightly thick and not very runny)
Transfer the batter into a zip lock bag and cut one end of the bag to make a small opening.Now pipe the batter into small coins on to the prepared baking tray.
Bake for about 20 to 24 minutes or until the edges turn slightly golden brown.The biscuits will be slightly soft to touch ,but will harden up once completely cooled.
- NOTES
- 1cup=250ml
- Depending upon the size of the eggs used you might need 1 or 2 tablespoons more of flour ,if the batter is runny.In that case gently mix in the extra flour using a spatula to form a slightly thick batter.
