CHOCOLATE ESPRESSO MUG CAKE

CHOCOLATE ESPRESSO MUG CAKE-Ready in less than 5 minutes,these are just perfect for those sweet tooth cravings.

Ingredients

  1. All purpose flour- 3 tbsp
  2. Instant coffee powder-1 tsp
  3. Drinking chocolate powder or sweetened cocoa powder-2 tbsp
  4. Sugar- 2 1/2 to 3  tbsp
  5. Baking powder- 1/4 tsp
  6. Milk- 2tbsp
  7. Egg- 1 no
  8. Oil-2 tbsp
  9. Vanilla extract-1/2 tsp

Method

 

  • In a mixing bowl combine all purpose flour,coffee powder,sugar and baking powder.Mix well.
  • Add milk,egg ,oil and vanilla extract,stir with a fork ,just until combined.
  • Pour this into a greased mug and microwave on high for  90 seconds( or a few seconds more) until cooked through.(DO NOT OVER COOK)
  • Serve with a scoop of vanilla ice cream or simply dust with powdered sugar.
ENJOY!!!!!
 
NOTE:
  • You can use cocoa powder instead of drinking chocolate mix ,in that case add 1 or 2 tsp more  sugar according to your taste.
  • You could also add 1 or 2 tsp of dark/milk chocolate chips into the batter to make this Chocolate espresso mug cake even more decadent.

      Applesauce is usually the preferred substitute. For each egg use 1/4 c. applesauce. You can also use a banana but believe it or not, applesauce doesn't impart a lot of flavor.

      Blake, I was concerned about that before I made it so I used an oversized mug first time out to see how full it would get. My advice is do not use a 6-8oz mug; bc of rising, it definitely is going to overflow.
      I used a 16oz mug and it puffed up to abt 1-2/3 full; pretty generous little cake! I also used Gluten-free flour, xanthan gum right along with the remaining ingredients. Perhaps the xanthan gum and baking powder caused mine to rise a bit extra?

    I just made this cake and it came out great!! I added 1 tblsp of chopped nuts and it was great, moist, awesome, not eggy…..try it!

    I used Cocoa powder + 2 extra TBSP of Sugar, a Gluten-free flour mixture + Xanthan Gum. All other ingredients remained, including the Baking Powder. The texture is amazing, the taste is so rich, too. After a few minutes of waiting to cool, I couldn't stand it any longer and I put some whipped cream on top

    I tried this and it came out very dense, possibly from the egg? Any suggestions to make the texture more cake like? I love the idea of it!

      It can become dense ,if you over cook the mug cake.
      May be next time you should cook for like ……80 or 85 seconds…do let me know…okie!!!

      You can use coffee powder or granules (1/2 to 1 tsp – according to your taste)

    I love this! I used a Keurig hot chocolate cup thing instead of cocoa powder and coffee, and added an additional oil tbsp instead of an egg. It was great!

    Just made this wonderful recipe, and after reading though the comments we used smaller cups(tea cup size), and split the full mixture between the two. I also halved the sugar. The resulting desserts were fantastic!! Thankyou so much – I'll be working my way through the rest of your recipes.

    I tried this but the bottom half of my mug was still wet (entire lump) while the top half turned out fine. Anyone knows why?

      It can turn dry ,if you over cook the mug cake.next time microwave for 80 to 85 sec and see.

    Hi vidya… tried your mug cake…it came out really well…But the only problem was that sugar settled to the bottom making the cake more sweet at the bottom. What sugar do you use?

    HI Harsha ,Thank you for the feedback.I have used fine granulated sugar.Sugar may settle at the bottom of the mug if the crystals are large and do not dissolve.So next time make the sugar finer using a coffee grinder or a blender.Hope this helps.
