Eggless Brownies
Chewy Gooey Eggless Brownies.

Makes: 15 to 18 nos
Ingredients:
- All purpose flour-12 tbsp
- Baking powder-1 tsp
- Baking soda-1/4 tsp
- Salt-1 pinch
- Semi sweet chocolate chips-1.5 cups
- Butter-3 tbsp( or use vegan butter)
- Banana,mashed-1/2 cup
- Sugar-1/2 cup( i used brown sugar)
- Hot water-2 tbsp
- Vanilla extract-1 tsp
Instructions:
In a mixing bowl,combine together all purpose flour,baking powder,baking soda and salt using a fork.Keep aside.
Melt together chocolate chips and butter in a double boiler.( you can also melt it in a microwave,if desired).
Transfer the melted chocolate to another bowl,add the mashed banana,sugar,hot water and vanilla extract.Mix well until combined.
Now add the dry ingredients and mix ,just until combined.Do not over mix.
Preheat oven to 180 Deg C. Line a baking tray ( 10 “x 10” )with parchment paper.Transfer the batter to the prepared baking tray.Bake for about 25 minutes or until a skewer inserted into the center comes out with very few crumbs. Allow it to cool completely
Notes:
- You can also use applesauce instead of mashed bananas.
- I halved the recipe and used a 5″ x 5″ pan.

For a guilt free version:
All purpose wheat/almond/coconut/soy/rice/flax/quinoa,etc. flour-12 tbsp
Baking powder-1 tsp
Baking soda-1/4 tsp
Sea salt-1 pinch
Semi sweet rice milk chocolate chips or unsweetened cacao powder to taste-1.5 cups
Butter/Ghee/Coconut Oil-3 tbsp
Over ripe banana,mashed-1/2 cup
Raw sugar/Coconut sugar/Raw honey/Agave nectar/Stevia-1/2 cup
Hot water-2 tbsp
Vanilla extract (not artificial "vanillin")-1 tsp
Add an egg and whey for a boost of protein
I like to spread peanut butter on top of my brownies like frosting. Give that a try! YUM

I used a 5" x 5" pan as i dint have a larger one and also we prefer slightly thicker brownies..

February 8, 2014 at 9:32 pmI made these this morning, partly because I had a few too many ripe bananas on hand. I like them, but husband found the banana flavor distracting, albeit subtle. They were easy to make, and the texture is nice – not too cakey, not too fudgey. Maybe I'll try them again, but use applesauce instead. I suspect that might resolve the flavor issue.
