Kerala Vegetable Pulav
Quick and easy Kerala style vegetable pulav

Serves: 2 to 3
Ingredients:
- Cashew nuts – 10 to 12
- Raisins -1 to 2 tbsp
- Ginger garlic paste – 1 tsp
- Onion ,sliced – 3/4 cup( 1 medium)
- Green beans,chopped – 10 to 12
- Carrot,finely chopped – 1 medium
- Pineapple,chopped – 2 tbsp
- Salt – to taste
- Ghee- as required
To prepare rice:
- Basmati rice- 1 cup
- Cardamom – 4
- Cloves – 3
- Cinnamon – 2″ piece
- Black pepper corns- 5-6
- Bay leaf – 1
- Water – 1.5 cups
- Ghee -as required
- Salt – to taste
Instructions:
- To cook rice-Wash and soak rice in water for about 30 minutes. Heat ghee in a pan.Add cardamom,cloves,cinnamon,black pepper and bay leaf,saute until fragrant. Add the drained rice and saute for few minutes or until the colour changes slightly.Add water and salt to taste,bring it to a boil.Now reduce the flame to low,cover and cook until done.Keep aside until required.
- Heat ghee in a pan,fry the cashew nuts and raisins separately.Drain and set aside until required.
- Add more ghee in the same pan,add ginger garlic paste and saute until raw smell leaves.Next add onion and saute until it turns golden.Next add green beans and carrot and cook until tender.
- Finally add the chopped pineapple and salt to taste, mix well.Cook for few more minutes and switch off the stove.
- Now add the prepared vegetables ,fried cashew nuts and raisins to the cooked rice.Stir gently until combined.Keep covered for about 10 to 15 minutes before serving.
NOTES
- Serve vegetable pulav with raita and kerala chicken curry .
