Orange Almond Cupcakes
Easy delicious orange and almond cupcakes.

Makes: 12 cupcakes
Ingredients:
- Butter,softened- 6 tbsp (85 gms)
- Castor sugar/fine granulated sugar – 6 tbsp (approx 85gms)
- Egg,lightly beaten- 1 large
- All purpose flour – 9 tbsp ( 85gms)(i used whole wheat flour)
- Ground almonds – 4tbsp
- Salt- 1/8 tsp
- Baking Powder – 1/2 tsp
- Orange zest- from one small orange
- Orange juice – from one small orange(approx 50 to 60 ml)
Orange glaze:
- Orange zest- from one small orange
- Orange juice – from one small orange(approx 50 to 60 ml)
- Castor sugar/fine granulated sugar- 4 tbsp(or to taste)
- Toasted,flaked almonds – 1 or 2 tbsp
Instructions:
Preheat oven to 180 Deg C.Line the cupcake tray with paper cases.In a large bowl,whisk together butter and sugar until pale and fluffy.
Add egg and mix well until well combined.
Now add flour ,ground almonds,baking powder and salt.Mix gently just until combined.Do not over mix.
Add the orange zest and juice and mix gently using a spoon just until combined.
Spoon the batter into the paper cases (fill about 2/3 full)and bake for 20 to 25 minutes or until a skewer inserted into the center of a cupcake comes out clean.Let cool in the pan for 10 minutes,then transfer to a wire rack .
To prepare the glaze combine the ingredients listed under orange glaze(except flaked almonds) in a sauce pan.Cook over medium flame ,stirring continuously for about 5 minutes.Allow to cool slightly.Prick the cupcakes allover with a skewer and drizzle the warm orange glaze on top.Finally sprinkle the flaked almonds on top.Allow to cool completely.
