Eggless Chocolate Cake

Ingredients
- All purpose flour–
1.5 cups - Cocoa powder–
3 Tbsp - Baking Soda–
1 tsp - Salt–
1 Pinch - Sugar–
1 Cup - Oil–
1/4 Cup - Water–
1 cup - Vanilla essence–
1/2 tbsp - White vinegar or Lemon juice–
1 tbsp - Instant coffee powder–
1/4 to ½ tsp (optional)
Directions
- Preheat oven to 180 Deg C.Line baking pan ( 9″ x 9″ ) with parchment paper,or grease it with oil and lightly dust with flour.
- Whisk together all purpose flour,cocoa powder,baking soda and salt in a large mixing bowl.Keep aside.
- In a mixing bowl ,combine together sugar,oil,water,vanilla essence,white vinegar and instant coffee powder( if using) until sugar is completely dissolved.
- Add this to the dry ingredients and mix until combined.
- Pour the batter into the prepared tray and bake for about 35 to 40 minutes or until a skewer inserted into the cake comes out clean.
- Allow it to cool completely and cut into squares.(Or cut the cake horizontally into two using a serrated knife,spread chocolate ganache between the layers and on top of the cake.Sprinkle grated chocolate on top,if desired.)
CHOCOLATE GANACHE
Ingredients
- Chopped Dark chocolate- 1/2 cup
- Coconut Cream( for vegan option) or use regular cream- 1/2 cup
Method
- In a sauce pan bring cream to just under a boil.
- Transfer this into a bowl,and add the chopped chocolate.Mix well until smooth.
- Allow this to cool completely and refrigerate for 1 hour or until required.
Note :You can also use whole wheat flour and brown sugar instead of all purpose flour and white sugar for a healthier cake,as i did.

I used this recipe to bake a double layer cake for my daughters birthday as well as some cupcakes as gifts for her friends.
everyone loved the cakes and I had so many compliments on how tasty the sponge was. Most people couldn't believe that I hadn't used any eggs considering how well the cake rose and how moist the sponge was.
Its definitely one of the easiest recipes I have used and worked exactly as promised!

If you wish to give it a try ,do refrigerate the cake for an hour or so ,,or until it is a bit firm,so that you can shape the cake easily,without breaking it…

Yes !!you can use whole wheat flour for the cake(the one in the pic is a whole wheat flour cake),the rest of the ingredients are the same as in the above recipe.Make sure that u do not over mix the batter.( mix GENTLY,just until combined).
The whole wheat flour cake did have a nice texture and was moist too.( if you use all purpose flour ,the texture of the cake will be slightly different and a bit more moist)

Yes!you can try many variations with this recipe… you can actually replace the cocoa powder with all purpose flour if you want to try a different flvr cake.Keep all other ingredients the same.you can also replace water with milk or even orange juice….Add a bit of lemon or orange zest,if desired…the options are endless..

July 24, 2014 at 12:46 pmgreat recipe! I always hesitate to bake any kind of cake as i am not a good baker and i'm in love with vegan cakes rather than ordinary ones with eggs and butter. However, I made this vegan cake with your recipe and it turned out very good except for being a bit plain as I did not add much honey. But i would serve it with banana sauce so no problems. Thank you for sharing! I will try other recipes of yours!
