Chakka Ada
Steamed rice flour parcels with jack fruit filling
Prep Time: 20 minutes
Cooking Time: 15 minutes
Makes: 7 to 8 adas
Ingredients:
- Rice flour -1 cup
- Water – 1 and 1/4 cups
- Ghee – 1/2 tsp
- Salt-1 pinch
- Banana leaves,cut into rectangles – 7 to 8 pieces
For the filling
- Ripe Jack fruit,seeds removed and chopped finely- 2 cups
- Water – 1/2 cup
- Jaggery,powdered – 1 to 1 and 1/4 cup
- Ghee – 1tsp
- Grated coconut – 5tbsp
- Cardamom powder – 1/2tsp
Instructions:
Boil water with salt and ghee.Add rice flour to the boiling water and give it a quick stir.Cover with a lid and switch off the stove.
After 3 to 4 minutes ,uncover and stir well with a wooden spatula.Transfer the dough to a mixing bowl and keep covered for about 10 minutes or until it is cool enough to touch.Knead well to form a soft dough.Cover and set aside until required.
To prepare the filling ,add jackfruit and water in a pan,cover and cook until soft.(stir well in between to avoid burning.)Once the jackfruit is cooked well add the jaggery and ghee.Cook for 3 to 4 minutes ,stirring continuously .
Add the grated coconut ,mix well and cook until the mixture turns thick.Finally add the cardamom powder and switch off the stove.Allow the mixture to cool completely.
To prepare the ada,take a lemon size portion of the prepared dough and place it onto a piece of banana leaf and flatten it using your finger tips to form a thin and even layer .(If the dough is sticking to your fingers ,dip your finger tips in water once in between.)
Spread a tablespoon of the filling onto one half of the dough and fold over the other half and press the sides gently to seal the edges.Repeat the process with the rest of the dough.
Place the prepared ada in the steamer and steam for about 15 to 20 minutes.Allow to cool slightly before serving
- NOTES
- 1cup=250ml
- Adjust the quantity of jaggery according to the sweetness of the fruit.
- You can use both white and red rice flour for this recipe.The quantity of water depends upon the type of flour used.
