Udupi sambar

Udupi sambar with idli and tomato chutney

Delicious Udupi style sambar with freshly prepared sambar masala
Prep Time: 10 minutes .
Cooking Time: 40 minutes
Serves: 3 to 4
Ingredients:

  1. Tuvar dal- 1/4 cup
  2. Turmeric powder- 1/4 tsp( divided)
  3. Onion,diced – 1 small
  4. Tomato- 1 small
  5. Carrot,dice- 1 small
  6. Drumstick,cut into 4″ pieces- 1 small
  7. Ash gourd,diced – 1/2 cup( see notes)
  8. Curry leaves – 1 sprig
  9. Tamarind pulp- 2 tsp(or to taste)
  10. Jaggery powder- 1 tsp
  11. Water – as required
  12. Salt – to taste
  13. Coriander leaves,chopped- as required

For Sambar Masala:

  1. Grated coconut- 2 tbsp
  2. Dry red chilies – 2 -3
  3. Coriander seeds – 1.5 tbsp
  4. Cumin seeds- 1/2 tsp
  5. Urad dal- 1 tsp
  6. Chana dal- 1 tsp
  7. Fenugreek seeds- 1/8 tsp
  8. Asafoetida- 1 generous pinch
  9. Oil- as required

For tempering:

  1. Mustard seeds- 1/2 tsp
  2. Dry red chilies,torn – 2
  3. Curry leaves – 1 sprig
  4. Asafoetida- 1 generous pinch
  5. Oil – as required

Instructions:

  • Wash tuvar dal until water runs clear.In a pressure cooker add the dal,1/8 tsp turmeric powder and sufficient quantity of water.Cook till done.Keep aside.
  • Now to prepare the sambar masala,heat oil in a pan and add all the ingredients listed under ‘for sambar masala’ and fry until it turns golden brown,stirring continuously.
  • Allow this to cool completely and grind to form a smooth paste using sufficient quantity of water.Keep aside until required.In a pan add onion,tomato,carrot,drumstick , ash gourd  and curry leaves with sufficient quantity of water and 1/8 tsp turmeric powder.Cook until done.
  • Once the vegetables are done,add the ground masala paste,cooked dal,tamarind pulp,jaggery and salt to taste.Mix well and simmer for 10 to 15 minutes.
  • Finally for tempering,heat oil in a pan,add mustard seeds and let it splutter.Add dry red chlies,curry leaves and asafoetida. Saute for few seconds and pour this over the curry.Finally add chopped coriander leaves ,cover with a lid and switch off the stove.

NOTES

  • You may add brinjal ,pumpkin,cucumber,potato or snake gaurd.
