Oat Banana-Raisin Muffins

Oat Banana Raisin Muffins

Easy and delicious, Oat Banana Raisin Muffins.

Prep Time: 10 minutes .
Cooking Time: 20-25 minutes
Makes: 12 cupcakes
Ingredients:

  1. Powdered Oats- 1 cup
  2. Whole wheat flour – 1 cup
  3. Baking powder- 1 and 1/4 tsp
  4. Baking soda – 1/2 tsp
  5. Salt – 1/4tsp
  6. Ground cinnamon- 1/4 to 1/2 tsp
  7. Brown sugar,firmly packed – 1/4 cup
  8. Sugar- 1/4 cup
  9. Raisins – 1/2cup
  10. Buttermilk – 3/4 cup+ 2 tbsp
  11. Overripe Banana,mashed- 1/2 cup
  12. Egg,lightly beated – 1
  13. Vegetable oil- 1/8cup
  14. Vanilla Extract – 1/2 tsp

Instructions

  • Preheat oven to 190 Deg C.Line the cupcake tray with paper cases.In a  large bowl,combine together powdered oats,whole wheat flour ,baking powder,baking soda ,salt and cinnamon.Add raisins and sugar and mix well .

  • In another bowl add the mashed banana.

  • Add buttermilk,egg,oil and vanilla extract.Mix well until smooth.

  • Add this to the dry ingredients and mix gently using a spatula ,just until combined.(Do not overmix.)

  • Spoon the batter into the paper cases (fill about 2/3 full)and bake for 20 to 25 minutes or until a skewer inserted into the center comes out clean.Let cool in the pan for 10 minutes,then transfer to a wire rack .
