Oat Banana Raisin Muffins
Easy and delicious, Oat Banana Raisin Muffins.

Makes: 12 cupcakes
- Powdered Oats- 1 cup
- Whole wheat flour – 1 cup
- Baking powder- 1 and 1/4 tsp
- Baking soda – 1/2 tsp
- Salt – 1/4tsp
- Ground cinnamon- 1/4 to 1/2 tsp
- Brown sugar,firmly packed – 1/4 cup
- Sugar- 1/4 cup
- Raisins – 1/2cup
- Buttermilk – 3/4 cup+ 2 tbsp
- Overripe Banana,mashed- 1/2 cup
- Egg,lightly beated – 1
- Vegetable oil- 1/8cup
- Vanilla Extract – 1/2 tsp
Preheat oven to 190 Deg C.Line the cupcake tray with paper cases.In a large bowl,combine together powdered oats,whole wheat flour ,baking powder,baking soda ,salt and cinnamon.Add raisins and sugar and mix well .
In another bowl add the mashed banana.
Add buttermilk,egg,oil and vanilla extract.Mix well until smooth.
Add this to the dry ingredients and mix gently using a spatula ,just until combined.(Do not overmix.)
Spoon the batter into the paper cases (fill about 2/3 full)and bake for 20 to 25 minutes or until a skewer inserted into the center comes out clean.Let cool in the pan for 10 minutes,then transfer to a wire rack .
